We were converted into mezcal more than 15 years ago. Back then, we did not have a clue about mezcal, it was just by accident after one the founders had a great time with mezcal in a wedding in Oaxaca, that we felt intrigued about mezcal and decided to learn more about it. At that time, in 2005, when most were drinking tequila, we decided to open the first mezcal bar, “La Botica”, a place that helped create the buzz about mezcal in Mexico City
Later as other aficionados were discovering mezcals from Oaxaca, we were exploring the different agave regions of the denomination of origin of mezcal - the largest in the world, to learn about the different varieties of agaves and the distinctive expressions from different maestros mezcaleros.
Later, as some brands had started to venture outside of Oaxaca, we were exploring less known agave regions, where excellent mezcal is produced but cannot be legally named mezcal, because it is outside of Mezcal D.O. (denomination of origin)
Recently, considering that from the 150 agave species currently recognized, less than 30 are commonly used to produce mezcal, we decided to experiment with some very interesting agaves that either had not been distilled before or where not available in the market
Now, we are proud to present the first mezcal ever to be produced only through solar power, therefore having less environmental impact and a clean, non-smoked, superb flavor profile
We believe that mezcal will be considered, in time, as the “Wine of Distillates”, because of its unparalleled range of flavor profiles among the world of distilled spirits.
We are on a mission to show what mezcal is really about, not a distillate with a worm, not a distillate made in a state of Mexico named Oaxaca, but a universe of very distinctive distillates produced in the many agave regions in Mexico.
